I recently bought some ground turkey and made a meatloaf mixture but baked it in a muffin tin. I shared a mini meatloaf recipe using ground chicken or turkey a while ago, but this one is different, and I liked it better. I just used my original meatloaf recipe from when my kids were little and added a bit of my Italian seasoning and a bit of chopped spinach.

I find turkey meatloaf to be a bit dry, so I mixed up some ingredients to create a sauce and it turned out really well. I just spooned the sauce at room temperature over the meat, but you could warm it slightly if you wish. I prepared this sauce again and used it to glaze a ham both before and while baking it, and I really liked the finished product as it created great flavour. I also made the sauce up again and used it as dressing for a lettuce and spinach salad with cranberries and feta and it complimented the ingredients really well and is something that I will make for my next salad. I didn’t really follow a recipe but have shared how I did it.

A friend recommended this grilled steak recipe and I have never tried it, but thought it looked interesting with the mushroom side dish to go with it.
