Paula Armstrong is the cook for the Cypres lunches and recently served this pumpkin dessert. It was delicious and so of course, I asked for the recipe.
I found this recipe for lemon shortcake bars in a 2004 Taste of Home magazine and tried it. They have a nice, tart, lemony taste and are delicious. I also just recently made these chocolate Rice Krispie balls and delivered them to an office in Caledonia and they commented on how good they were.
Cathie Rounce from Cayuga area sent me an email commenting on how much she liked both the sundried tomato spinach spaghetti and the corn chip salad from a few weeks ago. Cathie used precooked chicken in the spinach dish and just reduced the cooking time. She couldn’t find corn chips locally, so she substituted the little tortilla rounds and was happy with the result. Cathie also requested that I share some recipes for two so please send me your favourites.
