A Taste of Haldimand: January 1, 2026

Happy New Year! It’s also officially “leftover season.”

You probably don’t have many sweets left, but there might be turkey, ham, or mashed potatoes still in the refrigerator. Here’s a recipe for turkey cheese casserole that came from a friend about 40 years ago. One dish meals are so easy to throw together.

With this particular recipe, different types of meat or various kinds of vegetables can easily be used instead of turkey and peas. It calls for a tin of condensed soup, but I have started to make my own thick sauce to substitute in. It’s been shared before, but I will include that recipe again.

The crunchy potato balls was a recipe I was introduced to through our 4-H Potato Club last year. Everyone enjoyed them at the meeting. I tested them out on my grandsons and they enjoyed them all. This would be a great way to use up the leftover potatoes. Enjoy!
