
To start off the new year, I am sharing some recipes from Jarvis resident Travis Phibbs. I spoke to Travis in the fall after I noticed he had several baking entries in the fair. Travis graduated from Western University with an Honours Bachelor of Arts degree specializing in kinesiology. Currently, he is discerning the next steps in his academic journey. He is the son of Sheila and Glen Phibbs, grandson of Odeyne and George Wodskou and Marlene and the late Tom Phibbs.
Travis’ love of baking started with his mother, Sheila, whom he considers a great baker. He fondly remembers all the birthday cakes she has made and all her entries into the local fairs. As a teenager, Travis worked at D&D’s restaurant as a line cook, which nurtured his interest in food. 4-H also had an impact, as the muffin recipe he shared is from one of his 4-H clubs. Travis said, “I also like making things for others and watching them enjoy what I have prepared for them.” He added, “When visiting my aunt, uncle, and cousins in Bancroft each summer, we always make really great meals for supper. I enjoy connecting with family I don’t see too often over preparing and eating food.”
