It’s a tradition that I head to Caledonia to enjoy the July 1 parade and then spend the afternoon with friends partaking in lots of fun, food, and catching up. This year my grandsons were able to join me for the Canada Day celebrations, so I was one happy grandma!
I turned to Facebook to find something new to take with me to the Canada Day potluck. The chickpea, beet, and feta salad caught my eye and I traced it back to the website eatingwell.com. This company has been publishing recipes and articles about food and nutrition for over 30 years. EatingWell was a magazine created by the editors of the Harrowsmith Country magazine in 1990. Since then, it has changed formats and ownership several times. Currently, each recipe is tested by professionals in their kitchens and reviewed by a dietician. EatingWell strives to provide its readers with original content: “It is against our guidelines to publish automatically generated content using AI (artificial intelligence).” This made me feel confident that the recipes would be good ones. I enjoyed this original, quick, and simple dish.
The ravioli with tomatoes, asparagus, garlic, and herbs was posted in a Facebook group titled Mediterranean Diet & Recipes for Beginners. This was linked to the website address techiecycle.com. There was no additional information offered regarding the recipes and the organization is a creator of tech blogs. There were numerous pop-up ads, which made me question my choice of spending time on this site. In spite of this, the recipe was a nice change and I liked it. You will notice in the photograph I used tortellini instead of ravioli. Enjoy!
