With thousands of food choices available to us each day, I read that we tend to eat the same foods. I know I do, especially for breakfast. My go to choice is plain Greek yogurt. I use it as my base and mix it up by adding different types of fruit, supplementing with protein powder at times or blending in some apple sauce if I don’t happen to have fresh or frozen fruit on hand. To add some crunch, it gets topped off with homemade granola.
I discovered the granola recipe in the book “The Eat-Clean Diet Cookbook” by Tosca Reno. This book focuses on eating a well-balanced diet, while trying to avoid processed foods with too much sugar and little nutritional value. I have shared the original recipe. You can, however, easily adapt it to your preferences. Check out your local bulk food or health food store for different types of grains in small quantities. I have added pumpkin seeds, flax seeds, or dried currants. I also use regular brown sugar in place of the Sucanat. You can enjoy this as a
cereal or a quick on-the-go snack.
The second recipe has various names, but I just refer to it as E’s Bean Salad. It came to me from a friend who wishes to remain anonymous! I really like this salad and it has become a favourite summer recipe. It makes quite a bit, so it’s perfect to take to a potluck gathering or to share with friends. Again, easy to swap out the vegetables, adding what you prefer or have on hand. It looks great in a clear serving bowl. Enjoy!
