A Taste of Haldimand: June 27, 2024

When I asked my daughter if she would be willing to share one of her family’s favourite dishes, I made an assumption as to what recipe she would share and the cookbook it came from. What is that saying about assuming? I laughed at myself when I realized how different the generations think. Her sources for many recipes are Instagram and podcasts.
April and her husband Brian Barker, along with their three boys, live outside of St. Mary’s, Ontario on their 50-acre cash crop farm. Like all young families, they are busy. Both of them are self-employed, the boys are involved with sports, music, and 4-H, and they volunteer in their community. It is challenging to find meals that are quick, somewhat healthy, and that everyone enjoys. This recipe achieves that.
April listens to a podcast entitled “The Lazy Genius,” which led her to the “Change Your Life Shawarma” recipe on their website: thelazygeniuscollective.com/blog/shawarma. This is a recipe for marinating and cooking chicken. What makes it life changing is the interesting combination of spices used in the marinade, you choose the method of cooking, it can be cooked anytime and frozen so it’s ready for a quick meal, and can be served with a wide range of foods. April also mentioned she makes a large batch of the spice mixture so there is always some on hand. This is a versatile recipe, making it easy to please each member of the family. Enjoy!
