A Taste of Haldimand – March 28, 2024

Since I write this column from home and correspond via email with my colleagues at the Haldimand Press, it is rather difficult to develop friendships. I thought a good way to learn more about the people at The Press is to ask about their favourite recipes. 

Kaitlyn, Manny, and dog Xochitl

Kaitlyn Clark is the co-publisher of the Haldimand Press. She grew up in Cayuga, daughter of Richard and Cyndi Clark. Currently she resides in Dunnville with her husband Manny, who moved from Los Angeles, to join her in Canada. Growing up a millennial, it was natural for Kaitlyn to search online for recipe inspiration. She describes her cooking as a “measure-with-your-heart style” – experimenting with various spices, often combining recipes to make the dish her own. 

Manny suggested sharing the Hot Honey Salmon, or as he calls it “crack salmon” because he finds it so addictive! The second recipe was discovered when Kaitlyn needed to use leftover fennel bulbs. On Christmas Eve she makes Pulpo (octopus), a Mexican Christmas traditional dish, using only the tops of the bulbs. This gratin fit the bill.
