When I was growing up, casseroles were a mainstay in our meal plans. Once I had my own family, it became apparent why. The “one dish meals” are an excellent way to stretch your food budget dollar. The first one that comes to mind is my mother’s “wiener casserole”. We ate this as kids, I made it when I was a struggling university student, and later I served it to my own children. I like it more than for the taste – when I make it, I feel close to my mom. But it does come with controversy! My grandsons love it, but the rest of the family – not so much. It’s a kid-friendly recipe, you can sneak in a few more vegetables if you like and it will help stretch that food budget.
