I have been stuck in my house for a few weeks as I had a mishap that caused a compression fracture in my back resulting in a trip to the hospital and complete bed rest. My daughter, Allison, wrote a couple of columns for me and appreciated your comments that I have passed on to her.

These last couple of days I did start going through my pile of recipes that I seem to just keep adding to. These two recipes are from the 2019 milk calendar. Although it was not included in our newspaper, this year a friend got one for me. I always like their recipes as I have most ingredients on hand and they are healthy ones. These Arancini cheese balls take a bit of time to make but they are worth the effort. They can be made a day ahead and stored in the fridge until ready to use. I have not tried this recipe as I am still not able to spend any time in my kitchen, but I have eaten rice balls and I really like them.

This cauliflower crust pizza is a low-fat vegetarian pizza. You could add bits of ham, pepperoni or other meat if you wish. Be sure to pat the crust with paper towels to soak up any extra moisture.
