I recently had a request for some more salad recipes, so I am sharing some again today. I have also had a couple of requests for meat dishes and soups for fall, so please send me your favourites so I can share them, too.

I got this spinach and sweet potato salad recipe from a 2004 Taste of Home magazine that I was reading one more time before I got rid of it. It is one that I will definitely make again. Next time I won’t cook the potato quite as long, as I felt it was a bit too soft. The recipe as shown makes 6 servings, but I used less and made enough for a couple of days. It had even better flavour the next day.

The chicken salad with apple is one that I have made often as I really enjoy the combination of ingredients. I have not made the sausage, corn, and potato salad but the list of ingredients sounds very appealing. I am not a huge fan of kielbasa so I will probably try it with some smoked ham.

The mac and cheese salad is a great way to serve the leftovers. It makes 2 to 3 servings and is really tasty.
