I had a request for some pickle recipes, and I asked Brenda Eyre for her mustard pickles and pickled beets recipes. Brenda has used English cucumbers and they are a bit softer but tasty. She also gave me her friend’s pickled carrot recipe, which the carrots can be substituted for green or yellow beans.
The recipe for freezer pickles is one from Helen Stubbs. These keep in the fridge for at least 8 weeks and freeze well for at least a year. The recipe makes 3 pints. I have made the hot pepper jelly and would use only half of the hot pepper next time as it was a bit too hot for my liking.
