I recently had a request for some gluten-free recipes and so I asked my friend, Lisa, to share some with us. Her peanut butter swirl brownies are rich and delicious. The sprinkling of flaked sea salt certainly adds to the flavour.
The balsamic potatoes contain rocket sprinkled over the top. Rocket is difficult to find locally, but arugula is a good substitution for it. Rocket has been used since the Elizabethan era in many salads in England. It has a strong peppery flavour and is almost identical to arugula. These potatoes start to become a bit sticky while baking, so you might have to add a touch more of the balsamic vinegar near the end of the baking time.
I have always liked Brussels sprouts and this recipe is definitely one that I would make again. The chestnuts add a nice crunch.
