I shared a pork recipe a couple of weeks ago but was asked to share some more. This recipe for pork tenderloin is one that my step-mother gave me years ago at a shower where all the guests were asked to bring a favourite recipe. I remember it well, but I also remember that she used pork chops instead of tenderloin. She served them with plain white rice, but pasta would also be good. The recipe as shown makes 6 servings.
I found this recipe for roast pork rack with maple beer in an Inn On The Twenty cookbook that my friend Theresa Thompson recently gave to me. Inn on The Twenty was one of the first of wine country’s restaurants, and their cookbook showcases many ingredients from Niagara’s farmland.
I have only used polenta a couple of times and haven’t tried this tangy pork recipe yet, but plan to soon as it does sound interesting to me.
