I received a lot of phone calls and email requests again this week to continue sharing gifts from the kitchen this week, so I am giving you a few more ideas.

I have included a favourite mini meatloaf recipe. These keep well in the fridge for up to 4 days and they also freeze well. I suggest giving them either straight from your fridge or packaged with an ice pack to keep them cool. When I made them, I used a regular sized muffin tin and they turned out really well. The original recipe called for just a quarter cup of feta and didn’t suggest adding spinach. I like feta so added a bit extra and I found that by adding the chopped spinach they were nice and moist with great flavour.

I had never made these chocolate cheesecake balls before but would certainly make them again. They are so very quick and easy to do and are a great little treat. Yes, there are only three ingredients, including the decorations. They also need to be refrigerated.

When my friend Paula told me about this pineapple recipe, I had to try it. It’s so easy and turns out light and delicious. Paula makes it in a 9×13-inch pan but I used a muffin tin.

One of the requests was for ginger cookies so I am sharing this recipe that I have made many times. It always turns out well and is certainly a favourite.
