Today’s recipes are in answer to some readers’ requests. I have made this Chinese rice salad for many years and it is always a good one. Be sure that you don’t cook the peas too long. I suggest thawing them and putting them into a bowl of hot water for 10 minutes. Drain them well and add to the salad. Do be sure to add the Chinese noodles just before serving as they soften quickly if added too soon.

This bacon jam is a good one. It makes a nice topping when warmed slightly and spread on a toasted bagel with cream cheese. I have added it to my meat loaf recipe before baking it and have also added some to scrambled eggs. You can keep it in the fridge for up to 4 weeks. I only added half of the amount of the chili powder when I made it. Microwave a few seconds before spreading on your bagel.

The pork chops with mushroom sauce makes a great dinner dish. You could use any kind of cheese you wish, but the provolone adds a great flavour. I used old white cheddar cheese as that is what I had on hand.
