I have used avocado in things, but it isn’t something that I have really developed a liking for it on its own. I do make an avocado garlic dip that I have shared with you before and it is really tasty. I have also had pureed avocado chocolate pudding which I liked. When I was given this recipe I decided to try it as I have eaten a feta and beet salad before and liked it. I didn’t have any arugula on hand so I used a mixture of spinach, kale, and head lettuce and it worked well.
I had a request for an easy baked meatball recipe and I immediately thought of this one. I used to make these entirely with ground beef and then used half pork and half beef. The last time I made them I used half ground beef and half ground chicken and they were good, but I do prefer the beef and pork combination as I found they were a bit more moist. I let them cool for about a half hour and then stored them in a container in the fridge. They can be stored up to 5 days. You could also package and freeze them. The recipe makes about 30. You could use these tasty little things on a pizza, in soup or with sauce over your favourite pasta.
I am also sharing a couple of short but tasty recipes that I have made. The sweet potato hummus is really good on crackers or with fresh vegetables. The home ranch dressing can be used either as a salad dressing or as a dip for vegetables. I used it on a salad this past weekend and my granddaughter Cammie commented on how good the dressing was. I did not add the hot sauce or the dill. I used thinly sliced red onion in the salad so I omitted the onion salt, too.
