Greek style macaroni and cheese is very cheesy and delicious. It is a more dressed up version of regular mac and cheese. I really liked the addition of the spinach. When I made it a few months ago I really enjoyed it. The next time I make it I will rinse the feta and not salt the water that I cook the pasta in as I did find it to be a bit salty. I also think that a couple of tablespoons of pre-soaked and drained, chopped sundried tomatoes would create extra flavour.
I often use ground chicken or turkey in dinner dishes, and I find that it stays moist as long as you don’t overcook it. This turkey lasagna starts with oven-ready precooked noodles, which I have never used. My friend, Mary Duncan, uses them often with good success. The recipe as shown makes 4 servings. I halved the recipe and didn’t have any precooked noodles on hand so simply boiled the regular kind as per the instructions on the bag.
My granddaughter’s friend, Colton, brought some Oreo truffles to Christmas dinner at my son’s family Christmas and they were so delicious that it was hard to eat just one.
