A few weeks ago Ed Blain of Caledonia brought me a couple of great pear muffins that his daughter, Amanda, had made. They were very moist and delicious so I asked her to share the recipe. She has made them with ripe, fresh pears and again with canned pears that she drained well. She always doubles the recipe as they are a favourite of her family. She makes a nice crumb topping for them.
I asked Amanda to share a couple of other favourite recipes with us. She gave me her easy buffalo chicken ranch dip and commented that she likes the original flavoured hot sauce, but buffalo works too. Amanda uses cheddar cheese, but you could use whatever you have on hand.
When you make the egg fried rice be sure to let the rice sit for at least a few hours until it is cold. She said that she prefers to use rice from the day before. Amanda commented that the soy sauce at the end keeps it moist and sweet.
