COVID has prevented me from doing a lot of things these past few months, but feeding my large family of birds is not one of them. I have an array of blue jays, cardinals, chickadees, mourning doves, woodpeckers, and of course, blackbirds. I am one of those people who think they should feed them year round. One of our readers, Anne Cavanagh, sent me an excellent recipe for making my own suet feed blocks. She makes these for her birds and there is never any waste. Anne finds that with the ones she purchases there is always some left on the ground.
I had a couple of requests for lower fat dinner dishes this week, and so I am sharing these with you. Cauliflower mashed ‘potatoes’ is an excellent recipe. The recipe as shown serves 4 people. It is suggested that you use a blender to puree, but I received an immersion blender for Christmas and so I used it and it blended up perfectly. The healthy chili recipe uses ground turkey breast, but when I made it I used ground chicken and it turned out well. I originally decreased the chili powder as I don’t like really spicy food, but when I taste tested I did add more to the pot. I used kidney beans, brown beans, and chickpeas.
