This pineapple salsa is a nice accompaniment to baked ham, grilled pork chops, or may be used as a dip with crackers. When I tried it I omitted the cilantro because I can’t seem to develop a taste for it. I added a bit of finely chopped fresh parsley and it worked out well. This salsa may be served at room temperature or chilled.

This fresh strawberry dessert is easy to make and delicious. I have not been able to purchase the cheesecake pudding mix locally but my friend and next door neighbour, Michelle, always brings some back for me when she goes to the US. I like to use it in several different desserts as it does add extra flavour.

I was asked for a baked salmon recipe and because I don’t eat anything that swims I am sharing my friend, Sara Buggeln’s, oriental maple salmon recipe with you. It is something that her family really likes and it is easy to create.

I got this iced tea recipe from Marilyn Genery of Townsend several years ago and it is a good one to enjoy on a hot summer’s day.
