I have developed a liking of avocado recently and have tried several different recipes using it. This egg salad with avocado is delicious. I put mine on a whole wheat roll instead of bread.

I saw the mini potato salad recently in an old magazine and, as I had mini potatoes on hand, I tried it and really liked it. The recipe suggested that you could add a sprinkling of red pepper flakes, but I didn’t have any so I omitted them.

I recently had a request for a tuna noodle casserole recipe so I have included the one that I always made for my kids. The crushed potato chips create a nice crunch over the top. You could use flavoured chips such as ketchup or vinegar ones for extra flavour.

When I made the spinach and feta crescents I just halved the recipe. Refrigerate any that are left over and reheat them at 300 degrees for about 10 minutes. I covered them lightly with foil before reheating them and they turned out well.
