I had never used cauliflower rice until just recently when I made the crisps that I shared the recipe for last week. I saw this recipe and so I purchased more so I could try it. I am glad I did as it is a very light and tasty dish. The recipe suggested using a regular onion, but I chose to use the green ones. They added extra colour and I would use them again. 

The chicken and vegetable pasta is from an old Family Circle magazine. The recipe called for heavy cream but I didn’t have any on hand, so I used 2% milk and it worked out well. You can also add some thawed or fresh green peas. For an extra boost of flavour you could substitute dry white wine for the lemon juice.

I have made these cookie cheesecakes a couple of times and they are delicious. I used the thin Oreos so I crushed two more than was suggested. I added a bit of chocolate sauce to the top, but you could also shave some chocolate over it. Don’t attempt to remove them from the muffin tin until they are cooled to room temperature.

The mock sour cream recipe is a recipe that I was given many years ago at a Weight Watchers meeting. I have used it and it is a good one and certainly much lower in calories than real sour cream.
