Strawberries have just come into season locally and so I am answering a reader’s request for some strawberry recipes. This recipe for Strawberry Pie is from a package of straw- berry jello many years ago. It is very easy to make and although the recipe recommends a baked pie shell I have made it with a graham cracker crust that I baked for a few min- utes and then let cool before filling it. It can be served as shown below or with a dollop of whipped cream on the top.
I have given you a strawberry shortcake recipe made with the traditional biscuits and also one that I saw recently that is made using a cake mix. The biscuit one is a recipe from my grandma who used to make us individual sized biscuits instead of a whole round layer. You can, of course simply use a Cool Whip topping in place of the whipped cream. It is also nice if you stir some instant vanilla pudding powder into the Cool Whip and let it sit for an hour before putting it on the pie.
The Strawberry Smoothie recipe is one that I got many years ago at a Weight Watchers meeting. It did recommend using skim milk and low fat yogurt but I have made it using whole milk and regular yogurt and it turned out well also. It makes 3 or 4 servings.
