This week’s recipes are in response to a request for some salads “that aren’t boring”. I really enjoy a nice crisp salad and so have recently tried all three of these and liked all of them.

Spinach salad with bean sprouts is a really delicious way to enjoy bean sprouts. The recipe calls for either canned or fresh sprouts. I used fresh ones as I prefer them over the canned ones.

I also only use baby spinach when the recipe calls for spinach as I prefer the smaller leaves. In place of any green onion I chop chives from my friend Pat’s garden.

The BLT Salad has great flavour. I used elbow macaroni and halved cherry tomatoes. I purchase bacon when it is on sale, bake it in the oven, and dice it up before freezing it. I like to keep it on hand for omelettes, salads, and hamburgers.

I often add dried cranberries to a tossed salad as I like the tartness of them. They are particularly good in any salad with a slightly sweet dressing.

I didn’t have a recipe for the broccoli salad and just tasted the dressing as I added things to it. I also sprinkled a few chopped chives and some extra grated cheddar over the top before I ate it. I used half old white and half old orange cheddar cheese and liked both the flavour and the appearance of it. You can use the whole stem of the broccoli, just be sure to chop it into fairly small pieces.
