I got this recipe for granola when I attended a Food Fit program sponsored by Cypres Support Centre in Caledonia. I really liked it and have made it a couple of times. When I made it I used almonds, pumpkin seeds, and dried cranberries. Be sure to let it cool completely before adding the dried fruit. You could also add ground cinnamon, nutmeg, ginger, or cardamom. If you don’t have dried cranberries, just use any kind of raisins. When it has completely cooled, dried coconut or chocolate chips make a great addition. 

This apple salad is very tasty and is one that I would definitely make again. You can use any of your favourite apples. I used Royal Gala. Although the recipe said to chill for an hour before serving I found that the flavour was even better when stored in an airtight container for two or three hours. You can use any kind of nuts. Pistachios, pine nuts, and sunflower seeds are also good when added to this. This is definitely a side dish that doesn’t freeze well. 

This chicken salad (slider) recipe is originally from a can of shredded chicken that my daughter brought for me to try. I made it with the canned chicken and really liked it, so I simply baked a couple of breasts and thighs when I made it again. I shredded them and let them cool completely. I used pecans the first time I made it but when I made this the second time I only had walnuts on hand and so I used them and it turned out well. I enjoyed the leftover chicken just as a side with a tossed salad.
