Sonya Langdon of Nova Scotia recently sent a couple of recipes to me. This recipe for Quick Weight Watchers Mexican Skillet is both nutritional and low in fat. I haven’t tried it yet, but Sonya said that it is one that her family likes. She serves it with a simple side salad. The recipe as shown makes 4 servings but can be easily doubled.
Her triple chocolate cake sounds delicious. I have already shared the recipe for the one that I make which is similar to this one. This looks as if it would be even better and I will certainly be trying it soon. I drizzle chocolate icing over the top. I warm it for 15 seconds in the microwave so it drizzles easily.
I love maple syrup and am almost out of it, but I did have enough to try this recipe for apple pie French toast. I did decrease each amount to a quarter of the recipe as I imagined that it wouldn’t freeze very well. It is a recipe from Foodland Ontario and they suggested serving it with a couple of slices of peameal bacon, but I simply ate it on its own and it was delicious. You can make the apple pie French toast up ahead of time, cover it well, and refrigerate overnight. Let it stand at room temperature for at least 20 minutes to a half hour before baking it.
