Molcajete Mixto is the other recipe that Kaitlyn Clarke shared with us.  

A molcajete is a traditional Mexican mortar and pestle that is made from a single piece of basalt rock (volcanic rock). It has a very rough surface. It’s like a cast iron pan in the way it needs to be seasoned before use and how it can imbue flavours from the previous foods made in it. It is essential in preparing this dish. 

Mixto means “mixed” in Spanish. This dish is a mix of food served in the molcajete to be shared. 

Kaitlyn got her original recipe from the internet but this is a dish that can be changed in many ways. Use the peppers you can get (just keep in mind what spice level you want), use a regular mortar and pestle, and pick whatever fillings you’d like. The cheese (queso) should ideally be a semi-soft, white cheese so it can melt a little in the warm salsa.

Kaitlyn and Manny used steak and shrimp as their proteins. They had some extra food keeping warm outside the molcajete. Kaitlyn said that the salsa can be very different in colour depending on the kinds of peppers you use.
