I have been sorting through some of my old cooking magazines and getting rid of them. I came across this mini cheesecake recipe in one from 2002 and it is a good one. I did have a difficult time finding the foil cupcake containers, though so needless to say I bought a few extra when I finally did locate them. It is a dessert that is easy to make as it begins with a vanilla cookie base. I topped mine with shaved chocolate and as I didn’t have any chocolate squares in the house; I simply shaved down a plain chocolate bar and it worked out well.
These cold wintry days made me think of a nice hot soup and this is a great way to make your own tomato soup. It begins with a jar of tomato basil spaghetti sauce, so it is easy to do. Be sure to drain your roasted red peppers well before chopping. I drained them and then patted them with a paper towel.
Bagel breadsticks are a good thing to serve with any kind of soup. I suggest cutting the puff pastry with your pizza cutter to make it quick and easy. If you don’t have bagel seasoning you can use sesame seeds with a sprinkle of Italian seasoning. You could also use a combination of sesame seeds and poppy seeds with a bit of Italian seasoning. If you don’t have Italian seasoning, just add some dried parsley flakes.
