I recently saw this Burger with Caramelized onions in an old 1997 magazine and thought it looked good. The recipe suggested that you could add arugula before putting the burger onto the bun. I added a bit of Romaine to mine.

Heather Anderson of Caledonia contributed this shredded beef on a bun recipe to an old church cookbook several years ago. The recipe as shown makes about 24 servings. I have made this in the past and really liked it. I stored it in single portion sized sealed containers and found that if froze well.

This Macaroni and Cheese sounded like a good one so I halved the ingredients and tried it. It is really creamy with the 3 different kinds of cheese. I didn’t have any elbow macaroni on hand so simply used the small curly variety and found that the cheese adhered to it nicely. The original recipe didn’t have any onion in it but I thought that would be a good addition so I simply chopped a couple of green onions and added them. I liked it with the onions in it. If you prefer to make this as a one dish casserole, simply add about 15 minutes to the baking time.
