A reader has asked me to share some more recipes using ground beef. I recently tried this ground beef noodle bake as I was intrigued that it called for cottage cheese. I used an immersion blender to mix the cottage cheese and sour cream. It is a very tasty dish that I added a bit of old grated cheddar cheese to as well.

The other two recipes are from Cypres lunch ladies a couple of years ago. My notes on them stated that they were both liked by all in attendance. We used bow tie pasta. I really liked the sloppy joe casserole, which as shown makes 8 generous servings and is topped with a crust.
