A few weeks ago, I shared a recipe for cheese crisps made with three kinds of cheese and I have since had a request for something similar but lower in calories. Dawn Taylor of the Jarvis area sent me her recipe for cauliflower cheese crisps. I tried them this week and really liked them. After storing them in the fridge they need to be crisped up again by putting them into a 300 degree oven for 2 or 3 minutes. If you don’t have Italian seasoning on hand, I would suggest using an oregano, rosemary, and basil mixture.

My friend Joanne Woods of Caledonia sent me her asparagus salad recipe and I made it this week, as well. I didn’t have any Greek seasoning, so I did as Joanne suggested and used some bottled Greek salad dressing and it was delicious. I really liked the combination of the ingredients in this salad and enjoyed it even more the following day. 

I also made these peach mini cobblers this past week and although they were very tasty, I should have patted the peaches drier as I felt they created dough that was quite wet and dense. Also be sure to fill the muffin cups just a bit over half full as I filled mine about two-thirds full and some of them ran over.
