I had a request for some recipes made in a mug or small bowl for an individual serving. Every few days I bake eggs in a small bowl to have on hand for breakfast. I really don’t have a recipe as I change it every time I make it. I simply beat 4 eggs in a bowl, add a little bit of milk, and then add chopped celery, pepper, green onion, and salt and pepper. I then add grated cheddar cheese and bits of chopped pre-cooked bacon from my freezer. I have used bits of cream cheese when I didn’t have cheddar on hand. I spray 4 small dishes with cooking spray and add the egg. Then I bake them in my toaster oven at 350 for 15 to 18 minutes. Leave the mixture at least ¾ inch down from the top of the bowl as they puff up as they bake. I then cool them, insert the container into a baggie, refrigerate, and reheat for about 90 seconds in the microwave.
My daughter gave me this recipe for a 5-minute s’mores mug cake, and it is a good one. The recipe as shown makes one serving, but you can double it. Allison has also tried the cinnamon rolls and she said they were good, too.
