I have already received some things toward my 150 Random Acts of Kindness project. Kaitlyn babysits for a friend for free when her regular childcare is not available, and her dad and cousin are doing some renovations on her new home. My son installed a new garage door opener for me, and my adopted grandson is fixing an electrical issue at my home. I baked a treat this week for the guys who are replacing my back deck. We are on our way towards 150, so please let me know about yours.
I recently made this pumpkin spice Bundt cake and it is really delicious. The original recipe called for a pumpkin spice cake mix, but I found out that they are only available in the United States and so I substituted a spice mix. You could use a white cake mix and you could also add about a cup of chocolate chips to the recipe if you wish. If you want to completely ice the cake, just double the icing ingredients except for the water. I prefer to use a glaze as it is quite sweet, especially if you add the chocolate chips. The recipe calls for pumpkin pie spice, but you can make your own if you don’t have any. I have included that recipe here, also.
The pumpkin tart recipe makes 12 to 15 regular sized tarts but can also be put into a pie crust shell. If you use a regular sized pie shell bake it at 425 for 15 minutes and then at 350 for 30 to 35 minutes.
My friend, Kim Zeller, sent me this recipe for Hawaiian Crock-Pot chicken and it is a really good one. It is easy to assemble and suggests using either pineapple rings or tidbits. I used the tidbits when I tried it. I also used red sweet pepper and added a bit more than suggested with good results.
