During this COVID pandemic I have read through several of my cookbooks and even gotten a few from the library. I found this recipe for chocolate coffee pecan pie and it certainly sounds delicious. How can one go wrong with those ingredients? I haven’t tried it yet because I didn’t have any phyllo pastry on hand and am trying to avoid the grocery store as much as I can. I will be trying it soon and have added phyllo to my list.
I love squash and this is the only way that I bake acorn squash. I was surprised to see the recipe in a published cookbook as I always thought it was just my grandma’s way of making it. I only use local real maple syrup when I bake it and have never been disappointed in the flavour.
This cheesy squash casserole is a great way to enjoy butternut squash. I have always found it to be difficult to cut and peel but this recipe suggests a great way to make it easier and it works so well! It makes a great fall dinner dish.
