The weather is a little cooler now, so we turn more to those foods such as soups, stews, and casseroles. This autumn bake is one of those comfort foods and it is a one dish dinner that is not difficult to make. The recipe as shown makes 4 servings. It is good with or without a salad on the side.

The spinach, sausage, and feta recipe suggested using beef sausage, but I made it with pork sausage from a local butcher. I suggest serving it over pasta or potatoes as there is lots of sauce. You could also use a crusty roll to soak up the excess sauce as it is too good to let it go to waste. This recipe also makes 4 servings.

The cheesy rice casserole makes about 9 cups but can be frozen successfully.
