Today’s recipes are all from a cookbook by James Barber – The Urban Peasant – that Barb James gave to me recently. They are all easy to make recipes made with ingredients found in most kitchens.
The rosemary potatoes are really tasty and the recipe as shown makes two servings. I used fresh rosemary when I tried them as I still had a bit in my garden pot.
When I shared chicken recipes last week I didn’t give you a chicken and dumpling recipe and two readers requested that I share one this week. This recipe makes four servings.
A suggestion with the cranberry and pork recipe said that it could be made with turkey or chicken instead of the pork. It also makes two servings and could be served over rice.
My grandma often made baked apples and I remember that she used cinnamon and nutmeg on them. You could easily prepare this with four or more apples. Grandma always served them with a dollop of vanilla ice cream and a drizzle of maple syrup over the top.
