Several weeks ago I gave you a recipe for rollups using tortillas and I was recently given a different recipe for them and really liked it. When I gave them to a couple of people to taste test for me they both asked me to put the recipe in my column. Spinach rollups are a healthier version of what I made and a really good way to get kids to eat spinach. The instructions said to dice the peppers and bacon, but I gave them a quick whirl in my mini mincer and I liked the result. I used whole wheat tortillas. Be sure to keep them well wrapped overnight in the fridge so that they get soft and the flavours blend together. When Stacey Greenway tasted them, she ate some as is and then heated the rest at 350 for 10 minutes and enjoyed them both ways.

These root beer back ribs are delicious! If you don’t have root beer and barbecue sauce on hand, use 2 cups ketchup, ½ cup molasses, and ¼ cup of vinegar. You can also omit the Montreal seasoning and use 2 tsp. each of ground cumin, smoked paprika, and chili powder, along with 1 tsp. dried oregano.

The garlic and red wine brisket is a very moist and delicious way to enjoy brisket. Inserting the garlic cloves in the slits on top creates a great flavour. If you don’t have tomato paste, you could use ketchup and only a Tbsp. of the brown sugar.
