The muffin cup mashed potato recipe intrigued me when I saw it. It is easy to make and a different way to enjoy mashed potatoes. The recipe is easily halved or quartered and is good with a bit of sour cream.
The chicken stir fry has a nice ginger flavour. I didn’t use the hot sauce and it was delicious without it, but if you like a bit more spice just add a bit at a time. The recipe suggested serving it over pasta noodles, but I enjoyed it with a bit of rice and sprinkled a few sesame seeds over it.
I found this recipe for sausage baked squash in an old copy of an Our Canada magazine. I like squash and so I tried it and really liked it. I did use ground turkey instead of pork sausage and the results were great. I debated about partially precooking the sausage, but it wouldn’t have been necessary as it was cooked just fine with the times allowed. Be sure to keep it covered for the first 45 minutes, though, as the turkey is so much leaner than the pork and it will dry out quickly.
