I had a piece of this carrot cake surprise this summer at my friends Brian and Dianne Lane’s end of summer ‘Beef on a Bun’ event at their home near Fisherville. Brian’s cousin Darlene Mcguire brought it and I really liked it, so of course I asked her for the recipe. I asked her for two more of her favourite recipes and she sent me creamy tomato soup and gum drop cake.

Her creamy tomato soup is a recipe that was originally from her mother-in-law and is a favourite of her daughter’s family. When her mother-in-law could no longer make it Darlene often made some for her to enjoy. Darlene uses Italian seasoning in hers, along with her own stewed tomatoes that already have basil in them. She uses chicken broth and purees it in a blender to give it a smoother consistency. I really like a bowl of hot, creamy tomato soup and as soon as it is soup weather, I will be making this.

The gum drop cake is also one of her mother-in-law’s recipes. She told me that it resembles a fruit cake when you cut it and it stores really well. I have not tried this one yet but certainly intend to. It looks like a very unusual and interesting cake recipe.
