I recently made these chocolate chip pumpkin muffins and they were really good. I used my mini-muffin tins in place of regular sized ones and just watched the baking time. They take about 12 to 16 minutes to bake completely. I have enjoyed them when they are still warm, but they are also good at room temperature.

I joined Jason, Jane, and my grandkids at their Thanksgiving dinner at the Steel City Riders club track again this year. I always enjoy their potluck dinner and this year was certainly no exception! We had turkey, roast beef, stuffing, and all the trimmings. I took a Crock Pot sweet potato dish, a green bean dish, and some of my maple bacon crack that I have shared the recipe of with you previously. This chicken recipe is a good way to enjoy ‘fried’ chicken by baking it and saving calories. The recipe can be changed to suit your choice of pieces and it can also be halved easily to make less. It stays nice and moist in the fridge in an airtight container. You could also freeze it for up to 3 months.
