I volunteer a couple of times a week at the Haldimand Norfolk Community Support Centre, which is where the Senior Support Service has their office. I looked through one of their fundraiser cookbooks and saw many really good recipes. It is an excellent cookbook that contains those ‘tried and true’ recipes. I saw this recipe for bacon wrapped asparagus and, as I had just purchased some asparagus, I tried it that day. It is a great appetizer recipe and is not difficult to make. I took some to a friend to taste test for me and she really liked it, too.
My granddaughters both love pumpkin pie, so I tried this Impossible Pumpkin Pie recipe and it is delicious. It is very similar to a regular pumpkin pie but without a definite crust.
The crispy peanut butter bars recipe makes 36 sweet and delicious bars. I used chopped dates, raisins, cranberries, and walnuts.
I have not made the spaghetti pie, but I thought it sounded interesting as well. You could use extra cottage cheese if you wish. If you are interested in purchasing one of these great little cookbooks, they are available at the centre for the reduced price of $5 as they are left over from a previous fundraiser. You can let me know or call the centre at 905-765-0877.
In the hint from last week, it should have been noted to wrap the celery in aluminum foil.
