Linda Staats sent this apple pie bread recipe to me and it looks easy to make. I haven’t tried it yet but will be doing so soon. 

I have made these baked cauliflower wings twice already. They are simple to make and delicious. I also did a batch using broccoli instead of cauliflower and found that it is a really good way to enjoy broccoli, even though I liked the cauliflower ones better. The second time I made the baked cauliflower I simply made a sauce by substituting the honey and buffalo sauce with maple syrup and barbecue sauce and really liked that, too. 

I recently made this mac and cheese and it turned out really well. Do NOT use chickpea pasta as I did (to start), because it totally disintegrated into the sauce. I then cooked up 2 cups of elbow pasta to al dente and stirred it into the sauce, which was a bit thicker due to the previous dissolving pasta. I simply thinned it down with a bit more milk and let it cook for a half hour longer. Fortunately, I had checked it about 45 minutes before the directions said it would be done cooking. 

Our random acts of kindness this week include a teenager returning an elderly couples’ cart to the grocery store. My neighbour brought me a loaf of her homemade sourdough bread. 

Baked Cauliflower Wings

  • 1 head cauliflower washed and dried
  • 1 ½ cups breadcrumbs
  • 1 Tbsp. Italian seasoning
  • 1 cup milk
  • 1 cup flour
  • 2 Tbsp. olive oil, divided
  • 1 tsp. garlic powder
  • ½ tsp. salt
  • ¼ tsp. pepper

Sauce – 

  • 1/3 cup butter, melted
  • 1/3 cup buffalo sauce
  • 1 Tbsp. honey
  • ½ tsp. garlic powder
  • Preheat the oven to 450°F.

Cut the cauliflower into bite-sized pieces, then wash and dry very well.

In a large bowl, mix milk, flour, half of the olive oil, garlic powder, salt, and pepper and whisk into a smooth batter.

Toss the cauliflower pieces in the batter and then place them in a large strainer. Allow any excess batter to drip off for 5 minutes.

In a medium bowl, combine breadcrumbs, Italian seasoning, and remaining oil. Toss the battered cauliflower in the breadcrumb mixture.

Place the cauliflower on a parchment lined pan and bake for 15 minutes. Flip and cook for 8-10 minutes or until the cauliflower is tender-crisp and the coating is crispy.

If desired, toss the cooked cauliflower in the sauce before serving. The sauce can also be served on the side for dipping.

Apple Pie Bread

  • 1 can apple pie filling
  • 1 yellow cake mix
  • 4 eggs, slightly beaten
  • 1 cup self-rising flour
  • 1 Tbsp cinnamon
  • 1 medium chopped apple

Preheat oven to 325. Mash the apple pie filling. Whisk the dry ingredients together. Combine the wet ingredients and fold into the dry ingredients. Grease two loaf pans and pour the batter into them. Sprinkle some white sugar and cinnamon over the top. Bake for 35 to 45 minutes until a toothpick inserted into the centre comes out clean. 

Crockpot Mac and Cheese

  • 2 cups shredded cheddar cheese 
  • 2 cups milk
  • 6 oz. evaporated milk
  • ¼ tsp. dry mustard
  • ¼ tsp. smoked paprika
  • 1/8 tsp. cayenne pepper
  • ¼ tsp. pepper
  • 2 cups elbow macaroni
  • 4 oz. Velveeta cheese

Cut Velveeta cheese into cubes. Set aside ½ cup of the shredded cheddar. Coat a 6-quart Crockpot with cooking spray. Combine the milks and spices together well. Stir in the macaroni and both cheeses. Cover and cook on low for about 2 hours until the sauce is creamy and the pasta is cooked. If desired, put into a sprayed casserole dish or 6 ramekins and sprinkle with reserved cheddar. Then broil about 2 -3 minutes until golden.

HINT: If you have a recipe that calls specifically for cake flour and you don’t have any, just add 2 tablespoons of cornstarch to one cup of all-purpose flour.
