Jennifer Marks of the York area recently sent this salted caramel pie recipe to me. I think it looks like a great dessert, but I haven’t tried it yet. If you cannot find jarred salted caramel sauce, you can easily stir ¼ teaspoon salt into regular caramel sauce.
I really enjoy cabbage rolls but don’t particularly like making them, so when I saw this recipe for cabbage roll casserole in a 2002 cookbook published by the Ontario Fair Association, I tried it. It is easy to make and delicious. The recipe as shown makes 4 generous servings and as it was suggested in the instructions you can use cheese slices instead of grated cheese if you wish. It freezes well, too.
I had a request for an easy-to-make quiche and this quiche recipe is just that. You can add a handful of frozen vegetables such as chopped onions, broccoli, or asparagus, which I keep in the freezer for recipes like this.
In continuing to share our random acts of kindness – while in Hamilton one day recently my friend Karen removed her coat and gave it to a homeless person. A friend fixed a computer problem that I was having. I took some baking to Mattice Trucking in Hagersville and the boss, Fred, gave me a very unexpected and most appreciated thank you gift. My neighbour, Dwayne, and my grandson, Aaron, have kept my driveway and sidewalks clear of ice and snow.
Salted Caramel Pie
- Graham cracker crust
- 1½ cups half and half
- Instant vanilla pudding
- ½ cup salted caramel sauce
- ½ cup icing sugar
- 1 pkg. cream cheese
- ½ teaspoon vanilla
- Cool Whip
- Chopped pecans or nuts that you prefer for garnish
In a large mixing bowl beat together the cream cheese, icing sugar, and vanilla until creamy. Spread the cream cheese mixture evenly onto the bottom of the graham cracker crust. Refrigerate while you make the next layer.
In another large bowl, beat the instant vanilla pudding and 1½ cups half & half for 2 minutes. Fold the salted caramel into the vanilla pudding until evenly mixed. Spread this over the cream cheese layer.
Top with Cool Whip and drizzle a bit more caramel sauce over the top and then sprinkle with the nuts.
Garnish with a drizzle of additional salted caramel and chopped pecans.
Easy No Crust Quiche
- 4 slices cooked bacon or ham
- 3 eggs
- ½ cup flour
- 1 tsp. baking powder
- 3 Tbsp. melted butter
- 1 ½ cups milk
- 2 cups shredded cheese
- Salt and pepper
Preheat oven to 350. Beat eggs and add flour, butter, milk, and baking powder. Beat well and add the remaining ingredients. Mix well and bake in a pie plate for 35 to 40 minutes.
Cabbage Roll Casserole
- 1 lb. hamburger
- 1 onion, chopped
- 1 tsp. salt
- ¼ tsp. pepper
- 1 tsp. garlic powder
- 1 Tbsp. Worcestershire sauce
- 1 can tomato soup
- 1 cup water
- 3 Tbsp. uncooked rice
- 3 cups chopped cabbage
- Grated cheese
Preheat oven to 325. Brown the meat in a large skillet. Add onions, spices, and Worcestershire sauce and cook until golden.
Drain off the fat. Stir in the soup, water, and rice.
Lightly spray a large casserole dish. Place the cabbage into it and pour the meat mixture over the top.
Cover with foil and bake for 1½ hours. About 5 minutes before it is finished baking, remove the foil and sprinkle the grated cheese over the top.
HINT: If a recipe calls for one tablespoonful of fresh herbs you can substitute using one teaspoonful of dried herbs.
FOOD FOR THOUGHT: It takes both rain and sunshine to make a rainbow.
