In early September, I was once again welcomed into the home of my brother and sister-in-law, Jerry and Lori Fagan. They reside in Calgary, and we were gathering to celebrate my nephew’s wedding.
My sister-in-law Lori is a great cook, and our conversation eventually wound its way to recipes.
Lori grew up in North Battleford, Saskatchewan with her parents and four siblings. Her love of baking and experimenting with new recipes began while helping her mother in the kitchen. She takes great pleasure in preparing dishes for her family of four children, their partners, the recent addition of grandchildren, and let us not forget the numerous visitors from afar.
She pulled out the Half-Baked Harvest: Quick & Cozy, a recipe book written by Tieghan Gerard. One of the family’s favourite dishes from this cookbook is the double-baked taquitos. Yes, it takes a bit of time to prep, and yes, it is messy, but well worth the effort! Enjoy!
