I like to attend the Cooking Schools that our local Zehrs store offers and a couple of weeks ago Chef Aaron Fraser made baked vegetable egg rolls that were delicious. I liked them so much that I have made them twice since, changing the recipe a bit each time though.
Another dish that we were served a few weeks ago was hoisin sesame mini meatloaves. They were baked in muffin tins. I use my muffin tins for a variety of things as they create a great size for me to freeze as leftovers. I have made mini quiches, ham and egg dishes, layered potatoes, and a variety of other things using them. These hoisin sesame mini meatloaves are a single-serving meatloaf with great flavour thanks to some Asian spices. I really liked them, but would use a bit less of the chili pepper when I make them as I found them to be quite spicy. You could serve them with a quick veggie stir fry and/or a salad to complete your main course.
