When days turn crisp, leaves change colour, and fall is upon us, I start to crave comfort foods. This includes soups and roasted vegetables. I try to eat local produce and foods that are in season. We have access to a bounty of fruits and vegetables in Haldimand and from our neighbours in Niagara and Norfolk. This week I am sharing two of my favourite recipes. Both of these come from the cookbook “The Eat-Clean Diet Cookbook” by Tosca Reno. This book focuses on whole foods and how to prepare them simply and nutritionally. 

The squash soup recipe can be prepared with any type of squash you like. It is a fairly thick soup, so you may want to add more broth to match your preferences. I often will make a batch and freeze individual servings. I can easily take from the freezer and heat up on busy days. 

For the roasted vegetables I am sharing the original recipe. I always use a recipe but will make substitutions once I am comfortable with it. You can use any root vegetables you may have on hand. I often include sweet potatoes, cauliflower, and peppers.
