Often leftovers make a really delicious and quick meal. I had spent the last three weeks fighting pneumonia and I didn’t realize how much of one’s energy it takes. I didn’t feel like eating much, but when I did I simply tossed some things from the freezer into a crock pot with spices and broth and made a really tasty soup. I had previously frozen some sautéed onions, peppers, celery, and mushrooms. I also had a small container of carrots and niblet corn. I had it with just the veggies for a couple of days and then stirred some cooked and chopped bacon into it. I was surprised at how good it tasted. 

This spaghetti ham toss takes very little time to prepare and is a great way to use up leftover ham. It calls for fresh mushrooms, but you could also use leftover ones. The recipe as shown makes 6 generous servings but can certainly be halved. It could also be frozen in individual portions. 

Paula Armstrong of the Selkirk area sent me this recipe for caramel. She commented that it is unbelievably simple and a method she has used for several years. 

Karen Wells of Hagersville shared her recipe for cinnamon apple loaf and it is a great one. It stays moist and delicious for a few days in the refrigerator.
