I got the recipe for potato casserole from one of our editors, Jillian. Her fiancé Kyle has made it a couple of times already. He did it just for the two of them and then doubled it for a dinner with his family. Jillian said that it is a delicious dish and I look forward to trying it. Both times Kyle made it he served it with asparagus on the side and served roast beef on one occasion and chicken the other time. It pairs well with both meats. Kyle got the recipe originally from the Trisha Yearwood website.
The mustard balsamic pork tenderloin is an Ontario Foodland recipe. I haven’t tried it yet, although it does look like a really good one. It looks like it is easy to prepare and the recipe as shown makes 4 servings.
I have had a request for some recipes that serve one person and also for things that can be made in a mug. I know I could find them on the internet, but while I share recipes that others get from that source, I never search for them myself. I refer to my readers and many cookbooks from my collection.
