This cashew chicken recipe is one that was sent to me by Amber Carson. I haven’t tried it yet but she has and she and her husband both really liked it. It can be refrigerated for 5 to 7 days or put into sealable containers and frozen up to 3 months. 

When I was first given this peanut butter dump cake recipe, I questioned the lack of eggs in it. There are NO eggs, and the batter is very thick. You can use regular sized peanut butter cups and just chop them up into small pieces. It certainly is a tasty dessert or snack. I didn’t make the icing; I just drizzled chocolate sauce over top as I thought they would be really sweet if fully iced.

The corned beef and cabbage recipe is from The Bachelor’s Guide to Ward off Starvation, a book that I have found some very interesting recipes in. Most of them are recipes for one person but I increased the ingredient amounts in this one so it would serve more. When I purchased the ingredients to make it, I decided to try it with sweet potatoes instead of regular ones and it worked out really well. I will certainly be making it again.
